tofu rice paper rolls with peanut butter dipping sauce

This is a great recipe if you’re looking to add more plant-based forms of protein to your family’s diet and have no idea where to start! In this recipe you get protein from the tofu and also the peanut butter. You can also make this recipe using shredded chicken if you would like to have another option available. Hope you family have as fun with this one as mine does!

recipe (makes 8)


ingredients

baked tofu:

  • 1 clove garlic, minced

  • 1 tsp ginger paste

  • 3 tbsp soy sauce

  • 2 tbsp sesame oil

  • 1 tbsp rice wine vinegar

  • 1 tsp corn flour

  • 2 tbsp sesame seeds

  • 450g firm tofu

  • Pinch of salt

peanut butter dipping sauce

  • ½ cup In 2 Health crunchy peanut butter

  • 2 tbsp soy sauce

  • 2 tbsp sesame oil

  • 1 tbsp white wine vinegar

  • 1 tsp honey

  • 1 clove garlic (roasted for 15 minutes)

  • 1 tsp grated ginger

  • 1 pinch chilli flakes

  • ½ cup boiling water

some additional ingredients

You will also need rice paper, shredded cabbage, carrot sticks, cucumber sticks, sliced avocado and anything else you want to pop into your rice paper rolls.


method

1. Line a baking tray with baking paper and preheat oven to 180C with the fan on.

2. In a large bowl mix together the garlic, ginger paste, soy sauce, sesame oil, rice wine vinegar and corn flour until well combined (and you can no longer see the corn flour). Set the bowl aside.

3. Take the tofu out of the packaging and pat down using paper towel to absorb as much liquid from the outside as possible. Cut the tofu in to 1xcmx1cmx1cm cubes and add them into the large bowl you prepared earlier.

4. Mix well and pour onto the baking tray making sure all the tofu is sitting in a single layer. Sprinkle the tofu with the sesame seeds.

5. Bake for 30-35 minutes or until golden on the outside. Allow to stand for 5 minutes before serving (this helps it go a bit crunchy).

To make the dipping sauce – use a food processor to blitz together all the listed ingredients (above).

To assemble - Follow instructions on the rice paper to assemble your own rice paper rolls using whatever fillings sound delicious to you!!


tip

Tip 1: I would HIGHLY recommend adding a tbsp of the peanut butter sauce to the inside of the rice paper roll for ultimate deliciousness!

Tip 2: To make the shredded cabbage taste more delicious, drizzle with sesame oil and add a sprinkle of salt.
